THISTLE HONEY
Colour: Dark amber with green reflexes
Smell: definite, spiced of seasoned cheese.
Taste: particular, sweet, bitter aftertaste that it remembers the aroma.
Aroma: very intense, rich, spiced, persistent
Consistence: liquid, solid after 45 days
The thistle is one of Sardinia's local plants which flowers in late springtime. Thistle honey is light in colour, tending towards amber with greenish reflections. It has an intense, spicy smell and a pleasant, lingering taste due to its iron content. It makes an excellent sweetener for milk and ricotta cheese. It also has a healing effect for anaemics.

EUCALYPTUS HONEY
Colour: light amber
Smell: musk and eucalyptus flower
Taste: not particularly sweet, light salted aftertaste.
Aroma: dry of musk, leaf of eucalyptus and of dry boletus mushrooms
Consistence: liquid, solid after 45 days
Native tree of Australia very well adapted in Sardinia. The honey gotten by the nectar of its flowers is of great equilibrium, of low damp, with an extremely intense aroma that remembers the flower and the leaf of the tree. Subsequently there is still a sign of bark musk that remembers us the classical perfume of the dry boletus mushrooms. The taste is not particularly sweet and with attention we are able to discover a light salted aftertaste.

A vast assortment of millefiore honeys are produced from the flowers of a wide variety of species of wild plants (eucalyptus, myrtle, cistus, thistle, citrus fruits, strawberry) that give the local honeys their different colours, aromas, flavours and fragrances.

STRAWBERRY TREE HONEY
Colour: amber, dark amber when crystallized
Smell: vegetable, ivy leafs, coffee grounds
Taste: bitter, slightly astringent
Aroma: very intense, bitter, vegetable, persistent
Consistence: liquid, solid after about 45 days
This is famous "bitter" honey which is quite a rarity because the strawberry tree flowers only from November to February and the cold weather makes it difficult for the bees to feed on. It has a slightly amber colour, a fresh, pungent aroma ad of course its typical "bitter" taste. It goes perfectly with pecorino cheese and on "sebadas", it is an excellent guardian of good health and a soother of nasty coughs.
