Balsamic vinegar of Modena
The Guerzoni balsamic vinegar of Modena is obtained only by grapes that come from selected vineyards.
According to the tradition, Balsami Vinegar is produced without using, in any production step, preservatives or coloring agents. On the contrary, it is only used grape must, cooked in direct fire, and wine vinegar acetified.
The product has a dark brown color; an intense mix between sourness and sweetness is a characteristic of this vinegar, which is also extremely versatile, so that it can be used with various gastronomical specialities: in traditional Italian and regional dishes, coupling with sauces, horse d'oeuvre, soups, pasta, meats, vegetables, eggs and sometimes also sweets and “semifreddo”.

Traditional balsamic vinegar of Modena
The Guerzoni traditional balsamic vinegar of Modena, whose origins go back to the Este dinasty, is one of the most famous and precious dressing in the world: it has also gained the prestigious mark D.O.P.
It is produced by the ageing of cooked must acetified, saved in barrels which are different either for type of wood and for size. Traditional Balsamic Vinegar of Modena has a maturation process absolutely peculiar, which can last as long as 24 years: this process gives to the vinegar its unmistakable characteristics and aroma.
Before being bottled, the Vinegar is meticulously controlled by the Tasting Commission of the Chamber of Commerce in Modena: these controls are related to the characteristics of density and acidity, the organoleptic characteristic of the product. Once these controls are passed, the vinegar can have the prestigious name of “Traditional Balsamic Vinegar of Modena”. It is best used with meat dishes, vegetables, cheese. Its characteristics are also enhanced by fruit and ice cream.

Dressings with extra virgin olive oil.
Principe di Gerace® organic extra virgin olive oil is obtained exclusively from the Anastasi family farm olive plantations (Ottobratica and Sinopolese). Every year the olives are picked up by expert hands and within few hours from harvest they are processed in an olive mill and cold pressed. The oil is obtained in small quantities. For this reason we take care to guarantee the best organoleptic characteristics. It presents a very low acidity and a green colour with yellow reflections. Its fruity taste is intensified by combining the oil with different ingredients, such as lemon or bergamot, chilli or rosemary, obtaining the flavoured dressings with extra virgin olive oil. These organic extra virgin olive oils are suitable for any sort of cooking. They are ideal to dress fresh salads or to intensify the flavour of grilled vegetables, fish or meats.
They represent the best dressing for whom chooses a healthy nutrition with good taste.

Extra virgin olive oil Principe Gerace - Mediterraneo
Its organic extra virgin olive oils Principe di Gerace and Mediterraneo, are characterized by its high quality, due to the full respect of the human beings and of the environment, according to the basic organic agriculture teaching.
Our oils come from the best olives of selected olive plantations, without using pesticide or other chemical additives, making possible to obtain an exclusive oil, rich of the traditional Mediterranean taste, pure and natural, universally known as the basic ingredient of the Italian cuisine. The main cultivars of olives are: Carolea, Cassanese and Roggianella for the brand Mediterraneò®, Ottobratica and Sinopolese (Principe di Gerace®. The cultivation areas go from the coastal plains to the hill and low mountain areas.
Such a big variety makes possible to rely on very high quality products, influenced from both the intrinsic characteristics of the cultivars and the micro-climate conditions.

Extra virgin olive oil “Gusto Mediterraneo”
The extra virgin olive oil “Gusto Mediterraneo” of S’Atra Sardigna is produced by the selection of picked olives in the months of October and November in the north Sardinia. Thanks to the dominant cultivar “Bosana” it is characterized by a delicate aroma with a correct equilibrium among feelings olfactory and gustatory. We have left no stone unturned to make sure that the oil arrives on your table exactly as it was at the moment of pressing. Each step in the milling, storing and bottling process takes place automatically under sterile atmosphere and controlled temperature. At our plant, olive oil storing tanks are filled with nitrogen to keep the oil from oxidation. Even in the bottle we replace air with nitrogen, to prevent even the slightest oxidation all the way to your table. As it flows out of the presses, the S’Atra Sardigna extra virgin olive oil brings something special along with it - it keeps intact those qualities which only the best cold-pressed extra virgin olive oils made with the traditional system will have at the moment of milling.

Extra virgin olive oil “La Molazza”
With the brand “La Molazza”, the Minisci Group produces extra virgin olive olive, DOP and from organic agriculture, in the respect of an ancient traction. The name derives from the native stone basin in which the olives were put once harvests, then ground from two or four great granite wheels. The ancient tradition and the production facilities, today together to a careful activity of research and innovation, guarantee the high quality and the food safety of the produced extra virgin olive oil. Clear, sweet, genuine, the extra virgin olive oil “La Molazza” is the result of a long and accurate process of growing, selection and manufacturing process. Produced in the different lines, DOP and from organic agriculture, the care and the attention in the different phases of the manufacturing process guarantee the genuineness and the its high quality.
